Wolkonsky Bakery switched to a digital platform based on Microsoft Dynamics 365

GMCS has implemented Microsoft Dynamics 365 for Wolkonsky Bakery, a French bakery chain. This is one of the first projects in Russia for complex automation in the restaurant business using intelligent Dynamics 365 applications.

The ERP system automates the key business processes of the bakery chain: financial management, treasury, procurement, logistics, production and planning. Integration of Microsoft Dynamics 365 with the POS system and accounting system.

The solution was launched during the lockdown. Today the system operates in the central office and in all regions where Wolkonsky is presented.

“About a year ago, we realized that we had outgrown our IT solution and we needed to look deeper in digital. We have been choosing from a variety of decent platforms as an investment in best practice and technological advantage. The system opens up wide opportunities for improving business processes, on which efficiency directly depends. This is especially important now, since for several months we have been working under conditions of restrictions due to the pandemic, and this year Wolkonsky is 15 years old. During this time, we have been able to achieve a lot, we do not plan to stop, and therefore the IT solutions we implement should be easy to scale,” commented Alexander Alexandrov, CEO of Wolkonsky.

One of the solution features is the end-to-end process, starting from receiving orders from outlets, forming production orders on their basis, registering operations in workshops online using the developed KitchenDisplaySystem (KDS) module to shipping products to outlets. As a result, planning accuracy has significantly increased and costs have been reduced, as well as improved customer service.

Also, following the requirements of the Russian Federal Service for Veterinary and Phytosanitary Surveillance for registration and cancellation of electronic certificates, Microsoft Dynamics 365 was integrated with Mercury Federal System.

Further project development is associated with the replication to the international holding “Garez & Partners”, which also includes the Wolkonsky bakery chain (the head of the holding and the founder of Wolkonsky is an investor and businessman Alexandre Rene Garese). GMCS has started to implement the solution in which special attention will be paid to management accounting, project management and the ability to centrally receive detailed reporting from Microsoft Dynamics 365.

For GMCS, this is one of the first ERP projects based on Microsoft Dynamics 365. Cooperation with Wolkonsky began with a small project on check analytics, which initiated a large-scale automation project.
